Another thing, Fiorentina (the football team from Florence) played AC Milan just over a week ago. This weekend just gone they POSTPONED games to try to stop the spread of the virus. The game I just mentioned went ahead. Thousands of people from Milan travelled into Florence and sat in a stadium with Florence locals.
Probably no harm will come to you but expect to be quarantined on your way out for sure.

I would absolutely be prepared for being quarantined by the United States upon your return. You have a legal right to return to the country but not a legal right to go home immediately after. Military quarantines aren't luxury accommodations, so if you're prepared to stay with your fiance if things go south, that might be preferable.
Two major airlines have also already shut down flights to Milan, so at the very least, needing a few days to work out a way home is also a possibility.
Difficulty: I don't think you have any legal protections unless you are actually isolated or quarantined by the government. In other words, by not flying home to be quarantined, there's probably a strong case for firing you. If you're actually sick? I think you're protected in either case. As an employer, I wouldn't be hugely sympathetic to somebody who was delayed because they thought now was the time to visit northern Italy, but I understand why you want to go.

What would happen here, as we get 'Sick-Pay' with our employment of up-to 6 Months Full Pay.
So, for me. I could go there, catch it. Be put in Quarantine & still receive full pay for up to 6 months...
If you get Sick-Pay then it'll be covered by that or if not, i'm sure you can put a claim in for loss of earnings with your insurance?...

Are you getting to Paris on a connecting flight from Italy? If they start tracking passengers originating in Italy and your flight was booked on a codeshare, U.S. Customs will probably have noticed your flight plan.
Where are you going to clear customs into the EU? Your port of entry will be shown clearly on your passport stamp, so if you're coming into Rome, they'll know that.
Conceivably, you might also be required to fill out paperwork punishable as perjury.
It's also an open question whether or not France will still be letting Italian traffic through at some point in the future. A week ago, they said they wouldn't close the border, but that could conceivably change. Germany has apparently stepped up border checks on trains and other border security measures.

I just went to Thailand and had no problems whatsoever, and the only time anyone cared about the virus was the government when we entered airports or ship terminals. People were out, sharing drinks, hooking up in clubs, with no regard whatsoever.
I did however hear a story from a coworker that one of their family members (different country) got the virus after a trip to Italy. They came back and after 2 days living normally was diagnosed with Corona.
The reality of this is that the Corona virus will get into and affect every single country. There is no effin way that you can stop the virus from getting in. I flew through South Korea and came back through the US. The government didn't care that I was in South Korea (on layover) and let me through. My friend was on a separate trip to South Korea and wasn't blocked from coming back in the country. He went to the gym three times already and if he did have corona, he could have easily infected 200+ people. With the 2-Week incubation period, you could pass the virus to a lot of people, and it could just keep spreading and spreading. The number of cases will keep exploding in the US, it's only a matter of time.
A woman flew back from Iran with the virus and didn't show any symptoms. She was in New York City and thankfully took an uber home instead of the subway. But imagine once someone who does have Corona goes on the Subway. A few coughs and sneezes could infect a whole car of passengers, who will then go an infect other people.
