You can still eat too much cholesterol in the diet, but by eating high cholesterol foods you can dictate how much your body is receiving, instead of relying on your body to "ballpark" it.

Vigils (pronouned "Vee-Hills") is the best jerky i've ever had. Its a very thin dry and flaky jerky, almost like a potato chip, but it is amazing because it flakes off and dissolves in your mouth.
They also offer them in reasonably priced sized bags They're 2.99 in stores locally, but online is 4.00 for a 1oz bag so you can buy one of each flavor to try out without breaking the bank.

The Green Chili and butter mesquite are the best flavors to me. Oh, they also offer elk and lamb jerky.
