3 things:
- twice fried technique (makes it soft on the inside, crispy on the outside)..they are half cooked then frozen for shipments.
- thinly cut (thinner = crispier)
- choice of potatoes. McD controls & owns large interest in potato farms which gives them exclusive access Russet potatoes which are optimal for golden brown crispy fries.



the animal fat is a myth..they just use canola oil nowadays which can reach pretty high temperature without burning. animal fat is pretty expensive to use these days

Yea they are pretty good when fresh

I have no doubt they add MSG to the salt for umami. Same reason Chinese takeout is so addictive

Only things I get from McDonald's is chicken nuggets (now spicy) or a double cheeseburger. That's like once every 3 to 7 months. If I order fries, it's sweet potato fries. If McDonald's started making sweet potato fries, I'd try it.
