All you really have to do is ask about themselves and what they do. Many of them are so self absorbed once you get them going just pick little parts of their monologues and look like you're remotely interested in what they are saying (that is what interviewees do if you notice).

Example-

You-So where did you go to school?

Her-bla bla bla bla (insert school here) bla bla i majored in (insert major)

You- Thats awesome! (look at least semi-engaged and this next portion depends on if you actually know what she does for work or not. Let's assume you do). I don't want to get into it too much this isn't a damn interview (for some reason this works a ton), but what do you do exactly at work?

Her- bla bla bla bla bla. if she's even a little interested in you she's going to go into full detail and you just can stretch this a little further.

remember, once you reach a certain age, most people just work and a little activity here and there. if you get there just talking, literally just talking, you seem like the most interesting person ever. don't let the whole date be about work though. once you get it flowing though, there is some level of comfort built and you can take it from there.
