The gym is one long lifetime session, not individual sessions, the sooner you realize that the healthier your body will be later in life.
Actually research says 10 sets is optimal for time. The curve is logarithmic where 20 sets per muscle group, per week, is optimal saturation.

As you workout, you should be progressing through volume and amount of weight lifted. Nothing wrong with variation, so long as the variation can actually contribute to making progress. The big 3(or 4) lifts should always be every lifters strongest exercises. The rest of the exercises(isolations) are meant to help the big compound movements progress. As far as rest periods, I usually just rest enough to where I feel like I can give as much effort as I did the set before. Sometimes it is 1 minute, sometimes 2-3. I would say just do what works for you. You know your body best and know how it responds for growth. For me, compounds are usually anywhere from 3-5 reps for big 3. Isolations 8-15+. Just depends how I feel.

Well for me personally the gym is a home away from home.

When i am in a good mood, have a solid meal, and take my preworkout - i just LOVE to spend 2 hours at the gym smashing it.

How considerate that you want to help others; so they end up looking better than you.

Depends on the routine

I switch back and forth between 5/3/1 (3 exercises per day, plus a couple isolations) and doggcrapp, where I might be doing 7 exercises but only 1 rest/pause set each so it only takes 30-40 min including warmups

Pretty much agree. Lots of people throw in junk volume as a cope for garbage effort and/or execution. Or they just have no clue about how hypertrophy works
