I bought him outright bro, as with all my bulls. He wasn’t too expensive, idk if I’d call him a Chad, wagyus are small, definitely Manlets of the cattle world.

Mirin OP, sounds like a cool life (srs).

Steak looks really good. You dry age it for that long to create a crust over it right? Isn't that a preservation technique people could use after butchering before refrigeration? I imagine it's easier to do in a drier climate. Here in Texas you'd have to find the rare day in winter to do it or else it'd rot I bet lol

Been getting our meat from a local CSA for almost 5 years now and the quality is insane compared to any local supermarket. Their beef is 2+yrs, they have some that are older, they call them Eurostyle and they're aged even longer post-butcher. Their pork is all pastured in various orchards for better flavors (they're Berkshire pigs). Best part is they're the coolest people

My beef goes straight from rendering into my walk in cooler. This isn’t a traditional salt block dry age but I do that as well. I want to start butchering my own pork as well, we had pigs growing up and I’d like to get back into them. The industry is completely industrialized so they aren’t worth hardly anything but I’d like to fatten them up to eat and run through my steakhouse. The cool part about pigs is they never stop growing so I could potentially end up with some t bone sized pork chops.

I employ 8 full time guys, 2 running machinery and 6 running trucks.

When I say steakhouse I mean eating joint. Opened it in June of ‘19. It’s a great business as well, I throughly enjoy my time in the steakhouse. I never get tired of people raving about the quality of the meat, it lets me know I’m doing something right. I’m lucky enough to have some very capable and dedicated employees.

I agree it's aliens, I can't come up with anything else. My family had a dairy in southern Mississippi, used to see that happen, seriously crazy shiet. It's like surgery was performed in the middle of the pasture with lasers or something.
