That sounds like a fun and creative way to live in the middle ages. I would probably be a scribe and a cartographer. I enjoy writing and generating content, and I also like to explore and map out new places. Scribe by day, cartographer by night.

apparently some of my ancestors were vikings and vikings ate a lot of fish, cod in particular, so I'd have a fish and chips food stand. Imagine it would be good business with the church requiring that fish be eaten on certain days of the week.
