If you're really struggling with gas, aside from having a healthier gut, you need to go low[er] fodmap.

Once I quit eating literal pounds of broccoli and apples all the time, mine completely went away. I still eat high fodmap stuff sometimes, but not mega servings.

U got to get the grains off amazon. Look for the grains that says Thomas Egbert in description. His grains are legit and it comes with instructions on getting started and acccess to a pdf ebook about the process. But basically you just put the grains in the milk and let it do its thing. You want to stop it before it overferments. I got cheap ph meter off amazon too to know when its getting close to the end. Its usually 1 tbsp of grains to 4-6 cup of milk but thats temp sensitive. Should take about 24-36 hrs. Lot of info on youtube too. It takes time to get process down.

You ever ferment radish? Does the purple cabbage sauerkraut taste much different than typical green cabbage?

Its not really bloating & gas I'm worried about. I get a strong immune reaction from lactose. Fever, body aches, chills, swollen throat, cough, runny nose....even a small swig of milk would put me out of commission for several weeks, partner. Not something I'm interested in rolling the dice on.
Raw milk has the enzymes to help you deal with the lactose - which is why it doesnt give people gas

Also - it might not even be the lactose giving you that immune reaction, but rather all the other junk in pasteurized milk

It’s worth a shot. Drink just half a cup for a few days and work up.

dr. mercola has a K2 starter kit for fermentation. you add it to the brine and you get an enormous amount of Vitamin K, which most people are seriously deficient in.
highly recommend adding that to your fermentation.

Dr. Mercola Kinetic Culture Stick Packs - 10 Packets - 7 oz. (20g)

I'm not hoping to eat garbage all the time. My diet would remain relatively the same if my food allergies were magically cured tomorrow. I just want to not get horribly sick after eating a piece of cheese, a handful of popcorn, or pouring a little sauce on my steak.

And I've never had any issues with increased farting after I started eating sauerkraut & pickles. Doubt they'd cause gas as they tend to aid in digestion, not hamper it.
You should not be eating cheese, sauce, or popcorn, in any amounts, ever.

Just like you should not do drugs, even thou it feels extremely good.

In restaurants you order steak, medium rare, and leave the potato or whatever other plebs garbage they give you for the plebs. You can order sashimi, lamb, fish, eggs/bacon, there is no need to order extra calories that will make you hungry, fat, tired, and gassy, especially in your case.

The mostly carnivore-like elimination diet is the best and only way to heal your gut. The re-introduction of garbage food is unnecessary, but can be done after a few months. Slowly. A digestive enzyme supplement from a good brand would help, as will probiotic supplement. You should not bother with fermentation foods, it’s just a lot of farting and wasting time. You can try betaine hydrochloride thou, a much better idea, with bile salts etc. But honestly you are blessed! Your body can not eat garbage. What a blessing. You should be happy. It’s as if someone is forcing you to eat healthily.

They have OTC enzymes that are supposed to aid in the digestion of lactose. They have them for gluten as well. I didn't have any success with them. I think they're beneficial to those who are lactose intolerant, not those with a severe lactose allergy. If I drank a half cup of raw milk and had an immune response, I'd be very very sick for weeks, partner. Its high risk for me. And I don't mean a little gas, bloating & diarrhea; I'd quickly pull a high fever, body chills, aches, inflammation, runny nose, cough, swollen throat, zero appetite.....and it would last for weeks, not days. I've had a reaction run well over a month. I'd be completely crippled during that time. Its not worth a shot in my view. Even a small sip could spark a week-long reaction.

Betaine, probiotic supplements, bile salts & digestive enzymes have done absolutely nothing for me, partner. I've poured a good amount of money into supplements over the years and have had zero luck with them. Understand, this isn't a new issue for me. I've been avoiding food allergens for nearly fourteen years. Spent a lot of time & energy during that period trying to find a way to reverse the damage done by years of antibiotic use. In my opinion, fermented foods show some promise. Its definitely worth expanding on my intake of fermented vegetables. Doing it myself is incredibly cheap and I've had no negative response thus far. And outside of a fecal transplant (which I've researched), I'm not sure what else to try.

I do see it as a blessing in disguise. I completely understand your viewpoint there. I'm in good health, good physical shape, never been overweight, feel good day-to-day, clear headed, nice solid stools....and it probably sounds ridiculous, but outside of the rare occasion when I've inadvertently ingested a food allergen, I don't ever get sick. No colds, no flu, no sniffles, nothing. I also don't get body odor, but I don't expect anyone to believe that because it sounds like an absolutely absurd claim. As I said, I wouldn't suddenly start eating junk all the time if I were able to cure my allergies, but it would be nice to not have to worry about it.

^^ yeap, If I got sick every time I ate anything other than steak, fish, leafy greens, eggs, raw honey, and berries, I would be so freaking happy. Damn! LOL Imagine being forced to eat healthily.

I saw lots of stories of people in similar positions to yours, and I have not heard of success with fermented foods or fiber or other strategies. I did hear tons of success thou with carnivore.

I asked a really great doctor once how would he advice me to eat if I had cancer for example, to give myself the best chance, he instantly said: “ribeye once a day, with water. Nothing else. Ever. Lol
