Any of you boys into vegetable fermentation? Question about probiotic content.....

As far as probiotic content is concerned, am I correct in saying that the organisms are naturally found in vegetables and are allowed to multiply through the fermentation process? Am I understanding that correctly? If so, is it possible to get a complete range of probiotic strains through vegetable fermentation? From what I understand, there are over a thousand different probiotic strains living within your gastrointestinal tract. Information seems to be a bit difficult to find, but I've read that lacto-fermented sauerkraut contains 28 different strains, for example. Can't find much information on other fermented vegetables though. Different strains work to digest different types of food, so it would make sense for those with digestive issues to try to consume a very wide array of probiotic strains. I've been fermenting my own pickles & saurkraut, but I'm interested in branching out further.

A little backstory, I was put on a mild antibiotic called Doxycyline as a teen for a fairly light case of acne. I was kept on it for five years. Completely inappropriate. During that time, my acne got worse and my digestion went to Hell. Had several other chronic symptoms as well. Doctor was of no help at all. Just wanted to put me on more medication. It wasn't until my early 20s when I started to take notice of how I reacted to different foods. Through an elimination diet, I discovered several food allergies that I believe developed as a result of prolonged use of Doxycyline. Once I eliminated these allergens, everything seemed to correct itself within a couple of months. Skin was perfect, I could put on weight, nice solid stools, no more stomach pain, anxiety dropped significantly, good sleep, clear head....and I used to have a mild cold all year long...it cleared up almost instantly. I didn't even realize that my entire body was inflamed all the time. Once I cut out Gluten & lactose, it was like I was being hit with cool spring breeze all day long. Completely changed my life.

The only issue, since early 2010, when I cut out allergens, my diet has been pretty restricted. Beans, eggs, meat, rice, veggies, some fruit, nuts, seeds, oats, lentils.....haven't had a slice of pizza or scoop of ice cream in nearly 14 years, boys. Not even joking. I guess its good that I've been forced to eat very clean for so long, but it would be great to have a soft pretzel or doughnut every now and then. You boys know what I mean? But since cutting out allergens, the immune response I get from exposure is pretty severe. Severe & long lasting. I've been hit a handful of times, not in quite awhile though. Its to the point where I believe a few slices of wheat bread could actually put me in the grave. Its absurd. It really is. The reaction is very nasty.

My goal would be to replenish the gut bacteria that long-term antibiotic use had exterminated. The issue is that I suspect I would need to get a full range of probiotic strains in order for that to happen. And I'm not exactly sure how to do that or if its even possible. I'm hoping that digging further into vegetable fermentation might potentially provide some relief. Any helpful information would be greatly appreciated.

GP initially prescribed Doxycline to me for very mild acne when I was in 5th grade. Eventually he referred me to a dermatologist who kept me on it into High School. I would bring up my digestive issues and it would get dismissed as stress-related. Eventually I was diagnosed with IBS and put on medication. The medication gave me terrible migraines and didn't seem to work at all. Didn't take it very long. As an adult, I have zero trust in the medical field.

The issue with any milk product is that it'll spark a nasty immune response. I know there are different milks & yogurts that are beneficial to digestion, but I'm not able to consume them without making myself terribly ill for a very long period of time. I'm not able to digest them.

I used to blow my toilet up and pee out of my ass if i eat out until I started eating a few tablespoons of saurkraut from costcos. It even helped me portion control and i dont crave junk food that much anymore. Make sure its refrigerated bc it means there are still cultures in them. You can save the brine and make ur own by putting in fresh cabbage and wait like a month in the fridge.

If you get sick, the doctor will give you anti biotics. obviously its because you have too much biotic. Tells the that biotic is bad for you.

Makes no sense to want more biotic.

Not sure if srs. The more antibiotics you take,the more your body depends on them, so then your bodies natural immune system goes to chit. Thats the simple version and is 100% undisputable fact

Thats one way of doing it. Id go a step farther and get kimchee.Bit more potent and tastes better. At least to me

Couple jars of purple cabbage sauerkraut, garlic dill pickles, and some hot giardiniera peppers. I also like kim-chi, but my local asian store makes their own kim-chi that is cheap and really good so I usually just buy it.

Bonus: great gifts for your friends

You need to get on some quality RAW milk. Organic is not enough. Grass fed is not enough

It must be organic AND grass fed ANDraw. I get zero gas from raw milk. No toilet issues. Pasteurized milk on the other hand…

You ever ferment radish? Does the purple cabbage sauerkraut taste much different than typical green cabbage?

Its not really bloating & gas I'm worried about. I get a strong immune reaction from lactose. Fever, body aches, chills, swollen throat, cough, runny nose....even a small swig of milk would put me out of commission for several weeks, partner. Not something I'm interested in rolling the dice on.

Haven't done just radish, but I've had it before and know it's good. I put a little apple in with the purple cabbage, almost tastes a little sweeter to me.

I want to do this myself. I'll wait until next summer though when I can grow my own vegetables or get them from the farmstand by me.

I eat pickles, sauerkraut or some variation of kimchi every day with dinner. No more farting or stomach bloating from eating. Haven't had acid reflux/heartburn in a few years now. Including this was a big part of it.

Not sure, but it is the best way to get probiotic intake. A lot of probiotics don't even work.

I would start with a small amount of vegetable fermentation intake daily, and try to find a good probiotic (will probably be expensive) and little by little start to regrow and balance your gut microbiome.

This is why I do not trust the general doctor's advice on most things. Antibiotics or horrendous for you and literally destroy your immune system and gut microbiome. They should only be used for serious bacterial infections or out of necessity. Yet for some reason people pop them like candy for the sniffles and a small cough.

Reminds me of that BJJ guy Gordon Ryan. He talks about it on Rogan, but he was on anti-biotics on and off for like a year for staph infections and it wrecked his stomach.

It's kind of trial and error at this point. I had H. Pylori and cured it naturally. Had 2 ulcers, SIBO, etc. It was BRUTAL. But cured it in about 3 weeks and then slowly over the past 2.5 years have been reading research and eating clean whole foods, taking specific natural based pills for stuff, and incorporating things like fermented foods/veggies into my diet daily. I suffered from acid reflux for years, the day the world shut down for covid I realized my issues were from H. Pylori and would eat a ton of food, every meal was a warzone in my stomach, would still lose weight despite how much I ate, had searing radiating pain in two places (ulcers) after I ate, would have acid reflux wake me up in the night shooting up into my mouth or nose, and so on. I took black licorice dgl, mastic gum, oil of oregano, pepto bismol for the first week, garlic pills, probiotics, and some other stuff while only eating white rice and lean red meat mixed in a bowl with bone broth or chicken stock mixed with it. Even for months afterwards I realized I had to work on getting rid of some fungal overgrowth/yeast issues I could see in my mouth/tongue. That took a while, but I just took it slow added in good habits.

I also found refuge in eating keto (very meat/egg based and little to no veggies besides squash, fermented vegetables, and some local farmstand veggies).

I went from horrible stomach issues to now being on zero pills, having zero acid reflux, zero digestion issues, and feeling better than I have in so many years. I probably had h.pylori issues for years but it really didn't fully show until my stomach acid got down to extremely low levels.

Raw milk products are easily digestible for 99% of peope, even those who have bad reactions to modified/pasturized milk. Atleast do some research and try it out it might change your life.

Good post. I've tried probiotic supplements on and off for over a decade. At one point, I was taking one that cost $100 for a month supply. I don't think they ever did much for me. From what I understand, probiotics in supplement form don't colonize in your gut. They simply pass through your system. They also contain only a small fraction of the bacterial strain that exist in our stomach. A really good probiotic may have 25 different species of bacteria, while out stomachs contain over a thousand; each strain playing a different role in food digestion. And I probably completely wiped out a good amount of those bacterial strain with prolonged antibiotic use; making certain types of food completely undigestable. This is why I want to figure out if there is a way to replenish those missing species and maybe help to alleviate my food allergies. In my eyes, it seems like fermented foods may be the answer. I put on ten pounds with zero change to diet last year after I started eating lacto-fermented sauerkraut daily (165 to 175 @ 5'7"). To me, this would imply some sort of enhancement in the digestive process. I've been doing my own pickles and sauerkraut for several months now, will probably be venturing into other vegetables shortly. I'm hoping to one day be able to eat a Ritz cracker and not pull a week-long 103 fever. Information on this is a bit difficult to find though. "Probiotics" are generally discussed as one single item, not as a thousand different species.

I appreciate the suggestion, but you have to understand how badly that could mess me up. Its not a risk I'm willing to take.

Put a few chili peppers in there if you like spice. Also coriander seed, mustard seeds, a variety of peppercorns (lightly crushed), whatever kind of flavors you like. Can make kim chi pickles, chile lime, ginger, etc. I was eating a whole jar/day for a while so I experimented a lot.



Also I always use calcium chloride now to keep them stiff:

Why would you want to be able to eat garbage?

Grill yourself a steak once a day, drink water and tea. Have eggs for breakfast or lunch, can make salad as side. Done. Why do people think food is some amusement park ride for your mouth and you must be able to eat every stupid disgusting chemical crap they make that can be eaten?

I would challenge the entire notion that fermentation is even a good thing. Walking around farting all day is a good thing? Why said any of that stuff is good? How do you know humans are meant to ferment food? Why not just not eat garbage that causes issues?

I'd like to not get sick from eating 90% of the food out there, partner. Honestly, its a pain to go to a restaurant and have to ask a bunch of questions about food preparation just to ensure that I don't get feverishly ill for weeks afterward. I'm not hoping to eat garbage all the time. My diet would remain relatively the same if my food allergies were magically cured tomorrow. I just want to not get horribly sick after eating a piece of cheese, a handful of popcorn, or pouring a little sauce on my steak.

And I've never had any issues with increased farting after I started eating sauerkraut & pickles. Doubt they'd cause gas as they tend to aid in digestion, not hamper it.

I would challenge the entire notion that fermentation is even a good thing. Walking around farting all day is a good thing? Why said any of that stuff is good? How do you know humans are meant to ferment food? Why not just not eat garbage that causes issues?

I make Kefir regularly and just started buying saurkraut regularly. I imagine I'll be getting into vegetable fermentation shortly. In for advice

Yea I literally never fart unless I eat like **** at a restaurant or something (which is rare these days). Fermented foods help your gut microbiome and aid in digestion by helping your stomach acid. Fermentation creates lactic acid producing bacteria. Which is good.

And to reply to your other comment towards me, yea I noticed the same with the probiotic supplements. I only found one brand that worked and I already forget which it was. It was still not worth what I paid for it, which is why I focused on fermented veggies like kimchi, sauerkraut, pickles (my go to these days), and other pickled things. I'm Swedish too so I love this chit and grew up with a lot of it. Should ask my grandma for her pickling recipes and I'll post em up.

Other things I'm curious about too are things like psyllium husk, raw kefir, and bone broth fasts (I've had bone broth obviously. I've never tried any of these for the gut and might experiment soon.
