Yeah if you're an idiot who thinks that chicken = boneless skinless breast only. Eating legs with skin on and eating the marrow out of the bones is some of the most collagen you can get out of a food and it's delicious, savoury, etc.

Cooking chicken to 165* is an FDA psyop. What you're with at that temp is a dried out, flavorless hunk of chit. It's the equivalent of cooking all your steak well-done.
You can actually cook your chicken SAFELY in the 140s, and keep the juices and tenderness. Thighs cooked to the 140s are like the chicken version of a medium ribeye… tender and fatty.
Get some nice joocy thighs, rub them with some BBQ seasoning, marinate them with 1/2 a can of Coca-Cola, and throw them in the slow cooker. Then take them out once they get to 145 or 150 (they will have been in the 140s temp-wise for a while at that point.) Usually that's after about 4 hours on low or 2 hours on high. Dip it in your choice of sauce and you are set.
