2a. This is such a long answer. I'll try to be brief. I'd aim for 1g per pound as a baseline. Very rare I would go under that for lifters. In a hypocaloric state, I'll typically drive that number up. Protein, for all practical purposes, cannot be over consumed. Excess is converted to glucose and the body is very inefficient at this process. That makes for a great dieting food (see PSMF)
2b. Protein source doesn't matter much as long as you're getting sufficient leucine. Luckily, the leucine threshold is very low. I want to say its ~20g per day but someone can correct me if I'm wrong. If you're consuming at least some animal sources of protein, you'll be fine

Its a little too high fat for my liking though. Its also not going to work well at all for enhanced lifters that have even the slightest hematology issues (had to correct this on quite a few people over the past few years).

I don't get hungry until some time mid-day.
Truth be told, I don't know. I doubt your meal timing or frequency would have a large impact on your overall health if you don't have diabetes or a pre-existing health condition.
I tend to eat "real food" pretty often these days but my diet is limited mainly to chicken, pork, carrots, lettuce, onions, copious amounts of rice, and the occasional peanut butter in my protein shake.
Truth be told, I don't know. I doubt your meal timing or frequency would have a large impact on your overall health if you don't have diabetes or a pre-existing health condition.
