My personal favorite cuts are Porter and Hanger (if I can find it)
Seconds are chuck eye and ribeye.
Porter I currently pay I think 20/lb from the local butcher. I prefer grain fed personally, and pretty much all grass fed beef is grain finished.

I'm also a big fan of tri tip, Santa Maria style. Maybe it's a California thing but I heard tri tip isn't as popular other places. Any truth to this?

Lol yeah the state is pretty flat and sparsely populated for the most part haha. Tho his town of Madison is moving up. They have more than one traffic light in town now hahaha.

Also touched on in a different post refers to fat vs marbling. Intramuscular marbling is what you’re after and overall visceral fat has little to do with it versus the actual genetics of the beef. While I think the select, choice, prime grading scale is by and large non sense a select grade ribeye is more preferable to me due to having less fat than a prime grade ribeye.Texas, paid $16lb for prime ribeye, yeah I know not the best price but I wanted steaks. Got some prime NY strips for about $13lb. Tell me again why I want grassfed? It's leaner than grain fed... why do I want a leaner less marbled steak?

grass fed 85% lean ground beef with some mixed in ingredients for taste on the grill = burgers done right
melt a slice of wisconsin cheddar over the patty and grill the bun. chits all over burgers like 5 guys
for steak I still prefer the melt in mouth texture of fillet mignon, but have always wondered how restaurants get that perfect outside char on the meat.

Lol only time I’ve been on the west side of the state was to visit the Black Hills and see Mt Rushmore. Lovely state to visit when it’s not sub freezing temperatures and the mosquitoes aren’t out lol.
Definitely interested. Like I mentioned we had been looking at freezers to store meat. I hate shopping at the grocery store, and we eat a lot of steak.

I prefer bottom round for a blue rare myself. You’d be fine getting one at a super market. Intramuscular parasites aren’t a concern in beef.

However, it does seem like it would be very difficult for the government to enforce this, let alone regulate the lives of people out in the country.
Back in the day, the USSR tried really hard to regulate and control the lives of their citizens. This was somewhat effective in urban regions, but they failed completely to accomplish this out in rural areas. Eventually, they just gave up, because it was a logistical nightmare for them. I mean, imagine what it would be like if they tried to send agents out to every single cattle farm in the USA to confiscate their cattle.
It would be like trying to take everyone's guns.
The way I see it, it's just not something they could realistically do. I could be wrong though, but that's just my take.
