There is no way for the company to tell and since the vaccine doesnt even prevent you getting covid if you ever actually got covid you still wouldnt get in trouble.
The only way you would get fuked is if the fed goverment moves to some kind of digital passport tracking system and the companies register on there, then they find out you arent in the database.

That's really illegal stuff.
I don't know your state but Texas has immtrac and other states have similar registries.
Either get vaccinated or don't take the job. Giving a fake vaccine card can get you in a lot of problems in the future.

There's vaccine registries but they are optional. When you get the jab the nurse will ask you if you want it reported to IIS or whatever. Just say no.
They can't legally use that database to determine if you're vaxxed or not anyways since it's a violation of patient/doctor medical records.

Just print the PDF on card stock paper and go to one of the vax sites and try to get the newest lot number.
It's not even illegal. What is it illegal is violating your civil rights and forcing you to get some billy clot shot.

Also there's only a handful of lot numbers since the vaccine has been out for hardly a year, so if you're looking at lot numbers all day, its easy to spot a series of numbers that doesn't match the rest.
