I think the next mario kart will be the last. It'll be an "Ultimate" MK that will just get expansions and DLC. If they go MK9, they will have to figure out some whole new dynamic to make it worthwhile. I mean they have already sold 50 million MK8 units, doing DLC even for how old it is makes sense.
