I don't see the reason to take it out.. I do not cook it all the way either, but pretty damn close (like 85-90%). Once it's there, I throw everything else in, and by the time the gravy has thickened it has cooked fully through.

Made it again last night and used whole milk, salted butter (European butter), and no added salt. Literally turned out exactly how my dad used to make it. That's the only way to go now for me. When I used heavy cream it was too much.

Some added cayenne pepper though is pretty GOAT if you like it a bit spicy..
