dude gold 2 after just 100+ ranked games is godlike, specially for someone who didn't transition from a MOBA or RTS. I started LoL after playing mostly CS and TF2 and it took me 500 ranked games to get to gold 5, then another 300 to get to plat 5.
with that said, as a mid even if you're not building a big lead in lane you can carry the game by shoving in your enemy laner and roaming to sidelanes. not always possible with Vik tho since your waveclear is not the best until you one shot the casters with E and you have quite a few bad matchups that will keep you under turret. imho Vik is the kind of champ who will inevitably have games where you can't impact the map during laning just due to the scaling and lack of setup in his kit, then you'll rely on your teammates to not feed too hard before you get items.
try taking other champs for a spin so you can pick them into what would be bad Viktor matchups. if you like mages, Syndra and Xerath are good at early laning and shoving the enemy in so you get chance to impact sidelanes. if you want to figure out the champs that are good vs Viktor try Fizz and Talon.

I was so close to getting into Gold at 87LP S1 the other week and somehow managed to bomb myself down to S3 FML.

-If you strictly want to climb and not have fun, you need to play meta champs that pros are playing. They do it for a reason, because the balance team ****ed up.
-Viktor and other similar immobile mages are tricky to carry with. He's a strong laner, and you can get to a point where you consistently win lane 90%+ of the time. But even with TP, his map pressure and mobility is very limited. This means you have to rely on your jungler for map control, or on your top laner for split pushing. What you've probably realized by now is that you can't rely on any monkeys you get matched up with.
-The two most effective ways for me to climb have been mobile mid assassins (often times out of meta), and jungling with whoever is op. Keep in mind jungling is a lot harder macro wise, you need to be watching what 9 other people are doing.
-Another option (which isn't fun for me) is to pick a strong late game split pusher (trynd, singed, jax, irelia, etc), get consistent with early game laning, and then split all game. This strat is the least reliant on your team members, and usually even complete monkeys can win if you pull 3 of the enemies top.
-Avoid playing bot lane. Heavily reliant on jg and support, and adc requires the highest mechanics in order to carry yourself up the ladder.
-Also queue dodging is a valid strategy for climbing, but I don't have the patience. If you see your team picked weak champs and overall garbage comp, vs a clearly stacked team, better to take the -3LP than the -20LP and 20min game.
53% isn't too bad of a winrate btw

I've been trying fizz lately, he's alot different from what im used to as far as playstyle . And yeah I tried him cause of how hard he chit on me as vik lol. I also perma ban talon :P

I know I have 6 item slots but usually games are over when I get to 2 1/2 + my augment, so that seems weird to me lol.
I've struggled keeping up with laners that push me in, until I get my E upgraded with 4 points in.
I always ward my bot pixel bush with pink to help with roams, but ive had laners not even react to me spamming them danger as my lane walks through wards. I have been able to move in time when I spot them and make it be in our favor but others if my ward is cleared by the jg I'll be too late, so i just push my lane hard then I get flamed for not following even though I know I would never make it in time. I've been resorting to /mute all.
One matchup I just cannot win is vs zed, I just build armor before anything and try to get farm. Apparently viktor is a counter but I'm just terrible at the matchup I guess.
I want to hop in a side lane after I've gotten mid tower for gold/exp but my team always seems to fight when im the furthest away or back when i draw 3 and spend like 300 gold instead of pushing out other lanes, this is like every other game. And yea, 6 item games are much rarer nowadays. Riot has been trying to shorten average game length over the years.
Viktor has some of the better mid laner clear, so make sure you're not neglecting wave management to harass. If you need to push, always try to hit minions AND the enemy laner.
Buying wards for your team definitely doesn't hurt, but I've found that until you get to diamond, it doesn't really make that much of a difference. Obvi keep warding for yourself though.
Zed is busted and I think should be banned most games - he just snowballs way too hard. I wouldn't say Viktor counters him, since he has no reliable hard cc. I'd definitely ask for jg help in that matchup early.
I found that playing and getting better at jg helped me a lot with mid lane roaming, and as you said keeping track of enemy jungler. Knowing when to back and rotate lanes is important for 1v9 carrying.
Farming after lane phase is one of the hardest things in the game imo. I still can't do it, and most games have to rely on my lane farm + snowballing with kills. The only time i get 200+ farm after lane phase is when I'm split pushing. It's usually fine if you don't get the farm but your adc gets it. The losses come when nobody gets the farm

-Stay behind minions to mitigate Shuriken damage. EZ with ur Death Ray.
-His Level 1 Shadow is on 22 second cooldown before CD reduction. Ask for the Jungler to pounce him after he throws his Shadow for maximum kill chance.
-When he ults you, drop Gravity Field on yourself, try and dodge a Shuriken or 3 and dps him. Or use Zhonyas.
If Zed gets scared of you and buys Maw instead of the usual Duskblade > Youmuu to stay alive, he won't be quite as deadly.
He can also get ahead easy if he kills you then ganks botlane, so ping for your boyos. A good Zed will GG you for that.
edit: or you can just roll Fizz and make Zeds cry.

tbh I've met a few high-ranking Rioters IRL and some of them are just off. Lyte specially came off as a weirdo, really struggled to explain what he did in plain terms, said he owed his career to a bunch of pop psych/motivation books and his GF looked half his age, while hardly interacting with anyone else. plenty of neckbeards with power in there, no doubt some of them exercise it just as they would in a SoloQ game.

on another note, is anyone else getting ****ed by the new bot meta? I'm just not adapting boyos… I loved playing scaling ADC's so I'm just avoiding the role altogether now, but I'm getting wrecked as support. can't win lane to save my life

lol just played with a fer hiemers that went bot. they just pushed lane and we won by ff before 20 mins in both games. i normally play supp but i would feel bad going against that. first game was with a lux supp and second was alister.

You just lose if you play passive in general no matter what characters you play is what I've noticed. As soon as you start playing passive you just concede everything and lose a slow game.
hard to hate on a fellow wings fan but….

Bot lane is just a mess rn. Picking adc is a total coinflip, and it pretty much has to be xayah, kaisa, lucian, or jhin. If i get forced into support, i either go pyke or leblanc, and just do my own thing

geez, if y'all have some time to burn watch Afreeca Freecs vs Griffin Bo5. Some fukkin good league of legends and an upstart team maybe making Worlds out of the most competitive league.
