this makes no sense.

you just said that your recovery, food tolerance, etc. is declining. It means you already peaked biologically. The peak was when you weren't stiff after a hard day of lifting and when your chit didn't crack and pop.

Turning 27 soon and feel the same as I was at 21.

I've been healthy, dont drink often, and have been physically active most of my life, I'm sure this has helped.

Quite the opposite happened for me....I rotted from age 16 to about 21...ate like chit, was chubby, etc. Once i learned about the gym and started seeing some gains life became 100 times better. I actually feel like i have more energy now than my virgin fat self did back when i was 18 lol. Life is infinitely better now for me.

30 now.

Strength has gone up, and my agility is the same.

I think it has more to do with being at a lower weight, body fat, and how you train.

E.g. At 5'9, I've always been about 160lbs - 175lbs @10% body fat, and stay away from doing heavy deadlifts and squats. I know others who've been squatting and deadlifting but have joint and knee problems. I can only imagine what they will feel like in their 40s and 50s.

I'll say 34 or so. 37 now.

But still, at a fat 225 I can still run a 4.9 40(after a year layoff from all sprinting after knee surgery, might be a little quicker now). I'm not as strong but I don't train as heavy, either.

Other than the freak knee injury, I've been injury free. I don't have any aches and pains. I play rec sports with 20 year olds no prob. The reason I say I have declined is because I do need more recovery. I can't play a basketball game then squat the next day. I can't throw a football 100 times and do it again the next day.
