We've talked hunting in the past, you were doing a euro mount iirc.
What other rifles do you have (no atf, just trying to get a feel for gaps in your arsenal)? I can't personally see going bigger than 30-06 for North American game. I have no problem if someone else wants to, I just don't think bigger is needed, and my lighter recoiling guns get shot more. Sometimes the heart wants what it wants, though, and I do have my share of firearms that aren't practical. If I was buying it would be a 6.5 or 7mm, of your options I'd go 300 win mag.
One thing notable in the new Remingtons is they've tightened up the twist rates on 243 and 7mm mag. That opens up some options for high BC bullets. Regardless of what you get you'll have to let us know how the new remingtons look.

Pre-64's are cool. I have my grandpa's pre-64 270 and that action is so smoooooth. I have fond memories driving around with him looking for rock chucks. Really curious to hear how the new 700's shake out. My first deer rifle was an early 90's 700 ADL in 30-06.
Everything I've picked up in the last few years has been 6.5 or smaller. To me, the smaller cartridges are just more fun to shoot. It's easier to shoot 50+ rounds in a range trip, easier to spot misses and make corrections, etc. A little cheaper to reload - most of the savings is in bullets. A 308 is very capable, but I think a 6.5 is better. I don't buy a lot of ammo so I could be off, but for high quality ammo, I doubt the 308 has much edge over the Creedmoor. So I guess my thinking could be summarized as, I like to shoot the smaller rounds more for fun, but if I'm going to step up and go big, make it worth your time. I admit though, of the original options you gave the 308 would be the most practical, particularly if you want to do much shooting. It just get expensive and fatiguing on the body to shoot a lot of magnum rounds.

If you want to do a lot of shooting, .308 or 6.5CM are your friend.
