Indian Chicken Curry (Masala Style)
Ingredients
1½ lbs (700 g) chicken (bone-in thighs preferred for flavor)
2 tablespoons oil or ghee
1 large onion, finely chopped
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
2 medium tomatoes, chopped (or 1 cup canned crushed tomatoes)
Spices
2 teaspoons curry powder or garam masala
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
½–1 teaspoon chili powder (to taste)
1 teaspoon salt (adjust later)
Optional but recommended
½ cup plain yogurt
½ teaspoon garam masala at the end
Fresh cilantro for garnish
Instructions
1. Brown the chicken
Heat oil or ghee in a pot over medium heat. Add chicken and lightly brown it for about 5–6 minutes. Remove and set aside.
2. Cook the onions
In the same pot cook the chopped onion 8–10 minutes until deep golden. This step builds most of the flavor.
3. Add aromatics
Add garlic and ginger and cook about 1 minute.
4. Add spices
Stir in turmeric, cumin, coriander, chili powder, and curry powder/garam masala. Cook 30 seconds until fragrant.
5. Add tomatoes
Add chopped tomatoes and cook 5–7 minutes until they break down and the oil begins separating from the mixture (this is the curry base called masala).
6. Add chicken
Return chicken to the pot. Stir well to coat.
7. Simmer
Add 1 cup water, cover, and simmer 20–25 minutes until the chicken is tender.
8. Finish
Stir in yogurt (if using) and a little garam masala. Simmer 2 more minutes.
9. Serve
Top with cilantro and serve with:
basmati rice
naan
roti
Two tips that make it taste more like restaurant curry:
Let the onions get really golden (not just soft).
Cook the tomato-spice mixture until the oil separates.
