To be serious here, if there was a physical connection to her demise and being a vegan, I'd wonder if she was anemic (low red blood cell count due to anemia is a risk factor for altitude sickness), b12 deficient, etc that would effect her ability to deal with the low oxygen. As an experienced climber and doc, I'd expect she knew that, but denial aint just a river in Egypt and educated people suffer it no less than anyone else, so I wouldn't be surprised to learn some pre existing condition due being a vegan was a factor to her death in this case.

I'm not going to make any jokes as more sad than funny.

I don't know, but would guess that you'd have to pass pretty strict medical evaluation's in order to climb everest with a commercial team. No way they'd let someone with anemia try to climb a 30k foot mountain.
