Medium rare, closer to rare. Personally.

This thread is going to start a whole sht storm, so I'll just say that you can go ahead and enjoy your well-done steak...but you're throwing out money if you're choosing prime cuts to overcook since it all tastes the same by that point.

Especially if you're drowning it in A-1 and salt, then definitely get the cheapest cut on the menu.

Blue is where all they do is sear the top, removing the steak immediately afterwards. It's essentially raw steak that's been cooked long enough to kill any bacteria on the surface.
