To be honest I feel like I'm eating a ton, but if I add up the calories I'm usually around 1500 end of day when I go to bed.
You don't really have to focus on calorie counting when you eat raw or grilled with no fat veggies and fruits most of the day.

I've been experimenting with different vegan recipes and it's honestly been fun and easy. I never feel hungry and I'm feeling better all around.
