Aside from all the usual ones like Dark Knight, LOTRs, Interstellar, 300, etc, probably my all time favorite was going to see "The Hangover" (part one of course).
I hadnt even heard of the movie beacuse there was zero hype, looking at previews i thought it would be another retarded "buddy comedy flick", and i was dragged there on opening day by some friends...
Legit the hardest i have ever laughed. Was so blown away. The story, the acting, the vulgarness, etc. It was so great.

Never expected this to be a question, but awesome that it is because I knew the answer immediately.
Without question, it was watching The Martian while hanging out with my buddy cid. The whole perspective while with cid made it marvelous. It was like earth was determined to bring it's creature home. Never experienced anything like it and was mesmerized the whole time. Very hard to put into words.

Top 5 for me:
#1 - Saving Private Ryan
The opening D-Day beach scene on a massive scene was just shocking. Still remember reading about WWII vets that had to leave the theater cause it was so close that it brought back terrible memories for them.
#2 - Avatar in Imax 3D
Saw this on opening night and was mind blown. Saw it 3 more times in the theaters.
#3 - Interstellar
For all the reasons everybody else has listed. Just an awesome move front to back.
#4 - Inception
Another mind F of a movie. Had no idea what the concept was going into it, but the story line, music, and scenes like the zero gravity fight scene made this movie a true gem.
#5 - Transformers in Imax (the first one)
I was a huge transformer fan growing up and to hear Peter Cullen doing the OG Optimus Prime voice in the opening scene was awesome. I think this first one was well done, but the rest sucked hard! Saw the first one multiple times the first couple weeks.
Honorable Mention:
Jackass the Movie
The hardest I have laughed in a theater, without contest.

The Matrix, as I hadn't read any reviews beforehand, so just thought it would be a run-of-the-mill sci-fi film. I remember walking out thinking that I'd just seen something really special. Me and my mates were all trying to play it cool as we left the cinema; no-one wanted to be the first one to say how amazing it was hahaha
Crouching Tiger, Hidden Dragon; I saw it when backpacking in Oz and was blown away. It was the first of those fly-by-wire type martial arts films I'd ever seen. Great score too. Have fond memories of practising my ****ty kung-fu moves in the cinema carpark at like 2am
Saving Private Ryan, for the opening scene alone. The sound effects were unbelievable too. I think I was legit traumatised throughout most of the film

Agreed on Interstellar in IMAX. One of the best movie experiences ever, even though I was sitting in the most chitty seat imaginable and had neck pain for days after.
Batman Begins - to finally have a great Batman movie at the time was amazing in itself but having those epic Batman moments with the music booming made me hnnnnnnnnngggg the whole time.
