The fact of the matter is that moles are a type of mother sauce in the same way as French cuisine has mother sauces or the way most Westerners use 'curry' though curries have many different flavours. A mole is:
(i) pureed (texture);
(ii) chilies (many different kinds change the flavour/heat profile);
(iii) aromatics (tomatillos, roasted garlic...pick from any);
(iv) thickened (with tortillas, seeds, nuts...)
So to reduce this to 'chocolate' is an epic level of retardation.Darkchocolate is added to some to add extra complexity. To put it simply, haven't you ever heard of chili obsessed makers saying that dark chocolate is sometimes a secret ingredient? It doesn't make that chili 'chocolate' in the same way that the complexity of a real mole is not reducible to 'chocolate'.

Currently live in France and can attest that the cuisine is good here, but by no means the best.
Lived in Spain for a year and their food is absolute shyte. Fried, fatty tapas every day of the god damn week? No ty, never felt so unhealthy in my life. Although it was great for bulking when I got serious in the gym. As for dining in nicer restaurants that serve more than just tapas, still found it mediocre at best.
Spent a week in Italy and can agree it was hnng nearly every time we ate.
Japanese is GOAT for their sushi alone and I love Mexican food, although I'm often quite confused as to whether or not it's authentic or if I'm just eating Tex-Mex.
Move France to the bottom of the list, kick off Spain and replace with either Greek or Indian and your golden, ponyboy.
