Happy Friday thread...Recipe thread.

Happy Friday brahs, it's that time of the week again, and I for one am happy to see it. TGIF for sure. Not quite sure what i'm up to this weekend...Probably nothing. It's definitely a "wing it" kinda of weekend. Whatever you brahs are up to, have a great time, be safe, and have a couple drinks for ya boy.

My new years resolution was to start cooking more, and I really haven't held up to it. I've started cooking more than I did before, but not as much as I'd like, and you can only make the same thing so often. So what are some good, easy-ish recipes that I can incorporate into a personal cookbook of sorts.

Slow cookers are goat for making simple recipes that are delicious. Can make a ton of food with little work too.

Redraider def has a thread out there with a few hnng recipes. I'll see if I can find it.

One of my favorite favorite things to make is black bean burgers

Ingredients:
-Garlic
-Matchstick carrots
-1 minced onion
-1 tblspn cornstarch
-1 tblspoon warm water
-Sriracha sauce
-Chili powder
-Cumin
-Salt
-Black pepper
-1 cup bread crumbs
-3/4 cup flour
-1 can of black beans )Actually, any type of beans you have will work for dis, but black beans are my favorite!)

Cooking instructions:
-Preheat oven to 350
-Mash beans in a bowl, then add carrots, onion, and garlic. Mix all dem together
-Whisk all seasonings, cornstarch, flour, and water in a separate bowl. When finished, pour it into bowl that you mashed beans in
-Pour bread crumbs into bowl with seasonings, beans, and all the other stuff
-Add more flour if needed, but the mixture should be sticky to the touch. I usually use 1 cup total of flour
-Use hands to form mixture into burger shape

Oven instructions:
-Place burgers on aluminum foil tray
-Set timer for 15 minutes in oven, then flip burgers, and put them in for another 15 minutes
-Serves four people.

Looks pretty much like dis, minus photographic lighting



Also, excluding oven time, it takes me about 30 minutes to make, which isn't bad at all

For healthy protons:

Butterflied chicken breasts with brussel sprouts and garlic

Butterfly breasts and rub with oil and salt and pepper

Pre roast sprouts with oil and whole garlic cloves in 375 oven until they are almost done. (Halve them, you’ll know they are almost cooked when one side is browning)

Sear chicken in hot cast iron skillet 3 minutes per side, you should get good browning.

Once seared nestle breasts (lolz) in roasting pan with half roasted sprouts and finish together for about 10 minutes. May need to increase oven temp to 400ish.

Simple, fast, high protien, very satisfying.
It's your diet.

If you end up making any, let me know they turn out. I've also found The Pioneer Woman's website to have some truly amazing dishes, though exactly none are what I'd consider to be 'healthy.'

Smitten Kitchen is another great site. The recipes are a bit more time consuming but she goes into detail about the history of the ingredients, why they're important, and some food science type stuff. Natasha's Kitchen is great for old world, Russian/Ukranian dishes.

is it bad that i have no idea how to cook? my wife is basically my mama, she makes the best food. if something ever happens, god forbid, my goose is cooked. I'd probably lose close to 30 pounds

I definitely will. I'm going to look through and maybe decide on one to make this weekend. Yeah PW's recipes aren't exactly macro friendly, but they look amazing.

I don't think that's bad at all, as long as if you absolutely had to, you could boil some water or fry an egg. Your wife sounds pretty stellar. Nothing wrong with a couple taking care of one another when you're good at something. We've all got gifts, right?

I'm hoping to head out to her restaurant in a couple of weekends. I'm hoping to fly back 10 pounds heavier and with a whole bunch of chit I don't need but it's so pretty!

Perfect Frying Pan Steak

Get a good cut of steak—ribeye, filet, porterhouse, etc.

-Season with Grill Mates Montreal Steak (or find marinades/alternate seasonings on google. This just makes it easier). Make sure you press the seasoning into the steak
-Heat frying pan to medium high, melt 1tbsp butter
-Lay the steak in the pan, put another tbsp of butter on top of it, and leave it for 2mins 30 secs (throw some thyme in if you’re feeling fancy)
-Flip the steak and let it sit for another 2mins 30seconds.
-Remove from heat and let sit for a few minutes before serving. You can wrap in foil while it rests so it stays hot

SIDES:
-Get some green onions and cut the white parts off the bottom
-Throw in a frying pan over medium-medium high heat with olive oil, salt and pepper
-turn the onions until they’re soft and lightly browned then remove

Additional sides can be potatoes (mashed or roasted), rice, cornbread, whatever you want. You can fry up mushrooms similar to the green onions and serve on top of the steak.

I've noticed that it has become a lot more fun to cook when I have the Ipad in the kitchen with some background noise. It's not so mundane and chore-ish. You don't rush and you kind of get lost in whatever you're listening to our watching at certain points so you're not fuking with the food when you shouldn't be. You kind of just zen out and cook. lol

^^Honestly the best thing I've made in the past year - I make it every few weeks and can basically do it from memory now. It takes hours to make but only the very start and end require any babysitting - just let it cook away turning amazing and making the whole house smell hnnng.


Pineapple Chicken with Withered Kale and Coconut Rice

Get you some of this Habanero Roasted Pineapple Sauce. Costco sells it or seems like you can buy it online:

Cook a batch of rice in water to which you've added either coconut milk or some Coco Lopez.

While the rice is going fill a pot with Kale and a drizzle of olive oil. Set heat to 3 or 4 out of ten and let the kale start to shrink. When it has reduced in volume by ~half, add a little more oil and season with salt, garlic, red pepper flakes or whatever you prefer. Turn the heat up to 5 or 6 and keep cooking until it's done. This is my favorite way to eat kale.

Saute a few butterflied chicken breasts, then top with pineapple sauce. Serve over rice and kale.

The Pioneer Woman's recipes are sooooo good! I used to make a lot of her stuff back when I was married. Def not healthy though. Lol Her carrot cake is the bomb diggity.

^^Honestly the best thing I've made in the past year - I make it every few weeks and can basically do it from memory now. It takes hours to make but only the very start and end require any babysitting - just let it cook away turning amazing and making the whole house smell hnnng.


Pineapple Chicken with Withered Kale and Coconut Rice

Get you some of this Habanero Roasted Pineapple Sauce. Costco sells it or seems like you can buy it online:

Cook a batch of rice in water to which you've added either coconut milk or some Coco Lopez.

While the rice is going fill a pot with Kale and a drizzle of olive oil. Set heat to 3 or 4 out of ten and let the kale start to shrink. When it has reduced in volume by ~half, add a little more oil and season with salt, garlic, red pepper flakes or whatever you prefer. Turn the heat up to 5 or 6 and keep cooking until it's done. This is my favorite way to eat kale.

Saute a few butterflied chicken breasts, then top with pineapple sauce. Serve over rice and kale.
