You're comparing professional photos with paparazzi. ******t lighting makes a huge difference, and a lot of these photos are edited. In fact, most 'glow' pics (especially with instagram girls) have heavy filters. For a more accurate comparison here are pap shots from 2006-08:

Lighting is everything
The reality is that she was never all that, she just used what she had to the greatest effect.
But what's really done the most damage is that she's become a feminist and it's destroyed her X factor. She had a femme fatale look about her - hence her casting as the Black Widow - and she backed it up with her husky voice, great hair, plump lips and push up bars (the female equivalent to shoe lifts). You can see in the second pic above that she even wore push up bikinis (look at 3). But more importantly she had a certain charisma / sex appeal. There's an anecdote about Marilyn Monroe, at the time she was the biggest movie star on the planet, walking in the New York underground with a reporter and nobody noticing her. When she got back up to ground level she decided to switch it on. She fluffed up a bit and changed the way she moved and bam, everyone recognised her.
Something - age, bad experiences, break ups - just seems to trigger some people into rebelling against the system, and with women that something is often feminism. Enter the short haircut, loss of charisma, different styling (her eyebrows are different) and it's gone. Same has happened to Natalie Portman. They both have this weary look on their faces.
