I mean, I can understand OP - he's wondering "what could be" and whether she's "the one". For most guys it gets a lot harder to meet relatable women as you get older and get on the daily grind; no amount of money can make up for that unless you were going the mail bride route all along.
With that said, it would be a huge ass mistake to stay behind for her. Not only you barely know her, it seems like she's already accepted that you won't be around for a long time - her mind is already set on looking for the next guy, which is why she doesn't want to meet you again before you go. She liked the romance but your limited availability was no doubt a huge part of her experience. There's nothing that remotely indicates you'd put up with each other's daily bull**** or even be able to keep each other interested without touching/****ing being involved - which is why IMHO I don't think a long-distance relationship would even be worth a shot.
You're going to meet new women at your MBA and probably have access to tons more by getting to know people in different programs sharing the same campus. You seem like a smart, cheeky and considerate dude - no doubt you will find a better catch!

If there's a connection with any potential, then you need to sit down and have a grown-up conversation about it. If she's not willing to do that, then you should leave and tell her that you won't be looking her up again later.
Otherwise, if she's actually interested in LTR and feels similarly about the connection, then you should defer, or pick a different school that's closer--where you went to school doesn't mean anything to anybody.
A chance at true love is way more important. You just need to make sure that she's serious and capable of an adult conversation about things before making a decision. Where you met her doesn't matter... after all, YOU are just some tinder hunk.

I understand where 99% of the replies are coming from. It was infatuation after the first date, and now, after some days have passed, I've decided that it would obviously be quite foolish to defer the acceptance and wager my future on this girl.
However, I think true love is, and should be the end all of what a man seeks in life. Unfortunately the misc has adopted a rather toxic perception toward women. I've been browsing and posting for the last 7 years and lord knows, I've become a borderline misogynist too. This has turned everything into a numbers game. How hot the chick is, or how many chicks a dude has railed. Not against all that, but deep down, don't these miscers want a shot at true love too?

For the record I'm not a virgin, and I have converted a tinder date to a smash before. However, I'm telling ya'll (and none of you will believe me), this girl is different. Maybe, just as my intentions had changed over that first date, her intentions changed too. I hope so. Maybe she's giving up her slooting ways (if she was one in the first place).
ALl I know is that this girl is killing me. Its been a week, and she is the only thing I can think about.
