Think about it. The NK can crack the earth by touching the ground, he can fall hundreds of feet off a dragon and be unharmed, and on top of that he's immune to dragon fire. I mean, how the hell would a human being fight something like that? They'd get killed instantly
The best way they should've done it would be if Jon gets killed by the NK in a one sided fight. The NK pieces his heart with his ice sword which turns Jon into Azor Ahai. They fight again but this time Jon wins

I believe the book prophecy is that Azor Ahai kills his loved one which grants his blade magical properties, which he can use to kill the Night King.
Considering he's had a sword fight with two of them, it made the most sense. Not deus ex arya.

Without her there and Daario in charge, how long before all of her progress goes out the window? All it would take is a bit of light bribery to turn Daario after Dany abandoned him.

If they had to go with Dany growing violent, they needed to sow those seeds a hell of a lot earlier, like in season 6 at least. Judging by what Emilia Clarke said about going over her old notes again after learning Dany's turn, that really is on them for not being more explicit with the direction of her character and arc early on.
Dany's bloodrider speech should have been alarming, not backed with inspirational music, her part in the loot train attack should have been horrifying, but in particular, we could have seen more hints during her rule of Meereen. Once she executed the former slave for killing a prisoner before his trial, they should have shown far more civil unrest as the common people who praised Dany turned upon her, followed by her slowly growing almost disdainful and enacting harsher rules all around. So much of Dany's arc in Essos involves overcoming people who are frankly complete kunts, so her actions are damn near impossible to argue against - especially when there isn't even a spec of nuance to the situations.
If theyhadto make this turn within an absurdly short final season, then they should have made Dany's situation far more desperate. The Battle for Winterfell should have beencrippling- for everyone fighting - and the attack on King's Landing should have been hopeless without her unleashing her dragons' full potential. And yes dragons, because Rhaegal should have been killed during the attack instead of getting no-scoped by boats. Likewise, the civilians should have been actively fighting for their lives, giving Dany a reason to see them as a threat, creating at leastsomeshades of grey to the whole scenario.
Personally, I like the idea you mentioned about Jon having to sacrifice Dany in order to fulfill the Azor Ahai prophecy as the only means to defeat the Night King. It was just far too anticlimactic hopping from the existential threat introduced during the prologue to Cersei, to Dany, and then to Grey Worm looking kind of grumpy.
Bronn, Tyrion, & Jon are more examples of wasted time in this season and the abandonment of one of GoT's trademarks which is persistent danger and consequence. Dany was really the only admired-character sacrifice D&D were willing to make. Everyone else gets their happy ending. And what's worse, they all survive impossible odds en route to those endings.

Jon is the only other main character who I felt kind of got a raw deal (basically a bittersweet ending versus a happy one) specifically in the sense that he was treated by everyone else as a pawn, resulting in them all getting rewarded for his sacrifice.
First Arya and Sansa corner Jon with a, "we need to talk about your girlfriend," Arya guilt trips him with "we're family, we have to stick together," then Sansa breaks her oath to keep his secret. What happens after Jon kills the second woman he loves?
Arya immediately abandons him to fukk off to East Essos, and Sansa becomesQueen of the bloody North, basically living Littlefinger's suggestion that she rule instead of Jon. Sansa the oathbreaker gets to be Queen over a people who take oaths pretty damn seriously in a world that alreadytakes them dead serious. Considering how breaking said oath was another factor in Dany's mad turn to burn King's Landing, something Dany even said in effect, Sansa should be looking at a chopping block rather than a new gown.
Tyrion was the one who conspired and convinced Jon to commit regicide after already abandoning his position as Hand to the Queen, but what is his punishment for treason? A lofty position that he has admitted to enjoying.
Grey Worm having as much influence as he did felt out of place after taking part in the sacking of a city already undergoing a dragon apocalypse. Him keeping Jon a live should have been less an out of place plot contrivance and more of a necessity because they were still leaderless (the Unsullied are not used to freewill by a long shot) and cut off from any further aid or supplies.
But considering how he fukks off to die to Butterfly Fever, anyway, Bran manages to seem like even more of a prick for not at least pardoning Jon likeKing Robert did to Jaime, especially given the similar circumstances.
After all that, Jon going North should practically have been him storming off while flipping them all the bird.

They also missed a lot of interesting repercussions and fallout, or Jon being involvedwhatsoeverin his "trial"-turn-Bran election.

Look, i know i don't really know you and all, and i know you probably hear this like everyday, but your just so perfect to me.
