Probably genetics. I started losing my hair in my 20s, shaved my head because I wasn't in denial. So I have no clue if I'm going gray.
Some of my co-workers have a full head of hair, and they're going gray in their mid-20s.

I think it's mostly stress.
My dad has had a full head of gray hair since my earliest memories of him, so he's been fully gray since he was like 35ish year old. I'm 35 right now, and don't have a single gray hair on my entire head. I'll have to pull a gray maybe 2-3 times per year that I notice.
The only time in my life I've ever noticed increased balding and grayness was when I was in an extremely high stress work situation, and I took steps to combat it. Seems to have worked quite well, as I don't have any further gray or hairloss since then.
