MISC: Smoked a Beef Tenderloin Roast. Rate/10 (PICS)

Decided to go a bit rarer than normal in the center sections, on the rare side of medium rare. The end pieces were just above medium rare with a solid red color from edge to edge.

Smoked using cherry wood logs until desired internal temp, then seared off in screaming hot cast iron with a little safflower oil to crust exterior

Delicious

Its a short smoke when going for medium rare. About an hour and a half at 225 usually. Not enough time to develop a smoke ring, and even if you did you wouldn't be able to see it because the meat is still red and not well done color like a brisket

Did you cook solely on the smoker? Less of a smoke ring than i would expect.

See comment above your post. Too short of a smoke, and red color of meat means you wouldn't see a smoke ring

You have some nice looking meat OP.

General questions not related to this smoke. Do you ever wrap during the smoke and what are your opinions and likes/dislikes? I've experimented with naked, butcher paper and foil. I like the bark from naked the best but I'm not good enough yet to keep it from getting dry. The foil keeps it real nice and tender/juicy but I don't get that nice bark. I lean towards the butcher paper because it lands in the middle.

Do you wrap after you pull it out of the smoker? What do you wrap with? How long to you like to let it rest?

The only thing I wrap is brisket, and that is wrapped in peach butcher paper. I would never wrap in foil because then you are just boiling/steaming the meat and no smoke is reaching it.

For pork butt and ribs, use a water pan for moisture, and spritz em them every 30-45 minutes with apple juice

I always use a water pan but I've never spritzed the meat. That might be the key but my temp always dive bombs when I open the door so I always try to keep it closed.

If you have to wrap, try peach paper instead of foil. Preserves your bark and doesn't boil/steam.

I run a stick burner with a constant clean burning fire so temp comes back quick after opening to spritz. the liquid on the surface of the meat helps smoke molecules adhere to it, and cools surface of the meat to allow it to draw in more smoke
