Just got Vacuum Sealer boys, best meats to buy in bulk?

Title. I always see those huge pork/beef cuts at Costco, seems like taking one home and cutting it down then freezing with seasonings will save me a bundle.

Bonus points for stuff that sous vide well so I can go from freezer to cooking with no defrost period.

Save me some money/feed me tasty meat dishes misc. Will rep.

Go to a local grass fed/ regenerative farm. Buy a 1/4 or half cow

i like the big packs of tri tips from the business costco, i've never seen them at the regular costco though

i think i've seen similar packs at smart & final if you have those nearby

the whole brisket flats usually end up at a good price but i've never sous vided them

Overall worth watching educational video on not only the title (grass vs grain) but the different cuts and how to process larger portions you might buy in bulk.


Also, get a really sharp knife and learn how to sharpen.

Go find a local beef farmer, they'll usually do a 1/4 split with you. Better than ANYTHING you'll get in the store...not even comparable.

I usually buy steak, chicken breasts, chicken thighs, pork chops in bulk. Then freeze in our family size portions. You can also vacuum seal fish. It’s been a great investment! I haven’t had any of the vacuum bags or seals break or leak. I’ve also frozen sliced lemon. Those came in handy when I needed lemon to cook on top of fish. Another thing I’ve done was make crockpot dump meals. Threw all the ingredients into the vacuum seal bag then froze them. Pulled them out when I wanted a fast easy crockpot meal. I’ve made the crockpot dump meals from both frozen and thawed and they came out just fine both ways.

How do I make "dump meals"? Sounds perfect for weekend meal prep - I love having one or two weeknights already taken care of.

A dump meal is literally a meal made with ingredients you just dump in the crockpot. Usually involving few ingredients with minimal effort.
One of my favorite ones is an easy beef stew.
-1 1/2 to 2 pounds cubed beef stew meat.
-4 medium potatoes, cubed.
-4 carrots, cut into pieces or 4 cups baby carrots.
-1 medium onion cut into 8 pieces.
-2 cans (8 oz each) tomato sauce.
-1 teaspoon salt.
-1/2 teaspoon black pepper.
Cook on low 8-10 hours. Or high for 4-5 hours. If you previously froze it, add an hour or two to allow for defrost times.
I’ll usually make a few dump meals on a prep weekend and then throw them all in the freezer. Just make sure if you’re freezing them, that you freeze them in a shape and size that will fit in your crockpot if you intend to cook from the freezer. I have a 10qt so a I freeze my meals upright instead of flat. If it’s flat you have to defrost over night in the fridge so it’s squishy to throw in the crockpot.

If you google “easy crockpot dump meals” you’ll get a lot of recommendations. There are even a few dedicated dump meal cookbooks available.
