Mexican egg dishes - recipe ideas anyone?

I've been wanting to try cooking Mexican-inspired dishes lately. I'm heading into another cut cycle in around 6 weeks so I'm trying to make a few things that I won't allow myself to have once the cut begins. I also like to 'theme' my cut meals. Last year, I made a lot of Asian-inspired stir fry dishes during my cut. Before that, I made a lot of Indian-themed dishes. This time around, I'm thinking Mexican - within reason, of course.

I tried my hand at cooking huevos rancheros over the weekend. It came out pretty good. I'll attach a pic below. Does anyone have any Mexican dishes using eggs? I have hens and I get 3-4 eggs on a daily basis pretty consistently, so they tend to pile up.

Any ideas would be appreciated. I have the following ingredients on hand that I can work with:

eggs (obviously)
tomatoes
onions
garlic
cilantro
tortillas
sour cream
peppers
black beans
tex mex cheese mix
green onions
various spices (including cumin, chilli, cayenne)

I used to grow my own jalapenos over the summer. I miss those.

You have a lot of great stuff going on, pretty tough to top those ingredients.

Here is a dish I do with sweet potatoes and beans...eggs are underneath on this pic

Retired...no smartphone....no neighbors......just holes...

They were toasted. I couldn't find corn tortillas at the small shop we have in town. They also are not Dempster's, but a local Canadian brand.

well before you go any further you need to make real salsa, not the canned chit

its quick and easy grill some tomatoes and your favorite chili peppers, throw it in a blender with some onions /cilantro whatever, salt. done boyo

I made what I read was calledpico de gallo, which was basically a mix of the ingredients you mentioned - tomatoes, onions, cilantro, lime, and salt. I added that to the dish along with jarred salsa.

The plates are nice, the tortiallas look disgusting.

Looks like barbacoa on the tortillas which is good, haven't had that in a while.

No whole wheat tortillas or whatever those are, ever.

Corn tortillas only.

Not very hard to find, the Mexican grocery store I go to even sells homemade corn tortillas on weekends.

Basically, the extent of our Mexican section here is pretty much ol del paso (lol). I'd have to go to a specialty store. I live in the middle of nowhere now so that's really hard to find.

That sucks, I'd maybe order stuff online like say Walmart.com.

Tortillas last a while as long as you don't open the package.

Once you open the package they'll last 4-5 days max.

Breakfast enchiladas OP

Sweet potato/ Black beans/ Eggs are a great combo

From your pic, remove the salsa and replace with sweet potato, roll it up, and pan fry for a few minutes so they don't become soggy.

put in a baking tray, cover with cheese, and bake around 25min at 350.

Take out and then put the salsa/sour cream/ lettuce
