why is "red velvet" cake so popular?

I had red velvet cake for the first time today. it's literally regular cake with vanilla frosting, but colored red with food coloring. it tastes exactly like a standard yellow birthday cake youd probably had as a kid. WTF are people so wild about this chit for? its not some iconic dessert I remember being popular growing up like Jell-O, cheesecake or brownies. it just started getting popular in the past 5 yrs or so.

You need a good cream cheese frosting. That's the key.

Eh, it definitely depends where it's from. Red Velvet cake is best with a cream cheese frosting. Plus, you can definitely taste a difference in the cocoa in a good Red Velvet cake.

It should definitely have a more acid flavour to it unless someone just lied about it being red velvet. It should also have a bit of a sourness almost with the cream cheese frosting. You just got served food dye cake. just lol at you

I think it’s just ok. I personally love pound cake over any other kind of cake, especially cakes with frosting. I don’t really like frosting.

Not vanilla icing, but cream cheese icing.
Not vanilla cake, but chocolate cake dyed red.

Tried it one time. There was so much food dye that it gave me diarreah and when i looked down in the bowl it was completely bright red. Freaked out and thought i was bleeding out my ass till i remembered i had eaten it the day before

This. I've had both good and sh!tty red velvet cake. What the OP is referring to is that cheap grocery store sh!t. Good quality red velvet cake is amazing, rather eat cheesecake though.

Because it looks nice while being usually slightly "lighter" .

If you really want to next level just do Cherry Cheeze cake. Or cheeze cake with red jelly on top. Tastes awsome, looks awsome.
