Agreed, the dub on Bebop was one of the best I’ve watched. OP, apart from the anime listed, try out Kill La Kill, Afro Samurai, Code Geass, and Mushishi. Plenty of good suggestions above though, and Full Metal Alchemist is a favorite of mine. Also, if feels are your thing, A Silent Voice is good.

Nothing I've watched yet has come close to subtitled Hunter x Hunter. Literally everything is on point (story, animation quality, voice acting, action, music, etc...). But an honorable mention goes to Evangelion. Has the best intro I've ever seen and the movie End of Evangelion is what ties it all together.

IIRC the author had almost completed the manga and the ending was supposed to be whereSpoiler!

Then they got a deal for the anime but it would take a few years.

He knew that if the manga ended it would fall out of relevance and the anime wouldn't make as much money.

So he continued writing the manga until the anime came out, which is why the second half felt so forced.

I know a lot of it is dubbed, not sure if all is dubbed yet. The dub is actually pretty good, but I think the subs are still better.

Have to power through the first couple of arcs though, it starts off like a kids show, you'll think you are watching pokemon or something. But it gets dark and deep by the end.
