GOAT Seasoning / Rub for Chicken

Emeril’s Essence / Creole Seasoning

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

I don’t have cayenne so I use 1 tablespoon crushed red pepper and 1 tsp habanero powder I made from my garden last Summer. Also use smoked paprika instead of regular. i also don't add the salt since I would rather add myself separately to control. Roasting a whole chicken tonight with this.

The smoked paprika is where you nailed it. ****s goat.
I use smoked paprika and rib rack seasoning and its fn good.

Also smoked paprika on beef is rly good.

Just noticed you found the huge paprika. I can only find the little ones, fukkin sucks paying $7 for two weeks worth.

change your salt mixture to 2 tables spoons of MSG and 1/2 tablespoon of salt

Sounds like a nice mix
I use about the same combination of spices in my chicken batter. Probably a bit more black pepper and garlic. I preboil the chicken till it's close to done in salted water and put it on a rack to drain the water and let the water evaporate off the skin. Then the batter sticks better.
Then it hits the deep fryer.

Idk what msg does for flavor but i can confirm every BBQ competitor uses a chit ton of it.
