Basically it's using options the way they were designed to. Say you anticipate a huge crash and buy an OTM SPY 300 put for 3/19. If it crashes quickly the volatility increase and quick movement downwards would hedge your portfolio almost entirely, depending on how many puts you bought and your portfolio size. There are other variables involved but that's basically the core idea.

SPY currently trading at $372, so I would need $37,200 for one contract..

So hypothetically if I were to "buy to open" with a 2/26 expiration, $372 strike, at a cost of $10.25 ($1025 premium total), you're telling me that if SPY were to crash to say, $200, I could exercise my contract at that point to sell SPY at $372, and make $172 profit/share?

I am struggling with how puts work, I understand calls well, not puts

You buy calls and puts so you can sell when the premium goes up. Almost no one exercises them.

You aren't selling a put but buying it from a MM. Second part is what I mean.

You got it a bit wrong though. You're not going to want to exercise the contract since the extrinsic value of the OTM contract premium usually has a huge return if it crashes that fast. On the other hand, if it's a slow bleed, exercising could be better. You gotta look the breakeven for ITM puts and OTM and do some comparisonshttps://www.optionsprofitcalculator.com/
