I mean Dustin probably walks around 180-190. Brian Shaw is 440lbs... On top of that, it isn't fat. He is pure muscle/strength. Put a UFC Heavy weight under him and I'd wager they get up with some ease.

not really that surprising if he starts from the top

trying to carry all that weight is difficult. bjj techniques that would normally work on smaller people would be a lot harder to execute on somebody that big and strong

He also moved somewhat well on the ground. Held on rather well, intuitively pushed his hips down to increase pressure, kept moving his hips with the oponent, escaped butterfly guard. As awkward an untalented as his boxing was, as naturally and intuitively did he move during the grapple.
Many people develop some kind of dead fish syndrom their first time on the mat or would fail to notice the small adjustments Poirier made.

It isn't even just the weight. It's the sheer size. Trying to wrap your arms and/or legs around someone that big and wide when you have normal length limbs just won't be nearly as effective if you can even do it at all.
