It’s just your body being adapted to certain stimulus.
A 45 year old out of shape bricklayer will kill the 24 year old who’s its his first day on the job even though the 24 year old might bench 150 pounds more.
But you don’t just magically get stronger at some age for no reason

Imo old man strength is from years of lifting or hard labor, otherwise the old man is weak af

theres no reason an oldman would be stronger
otherwise everyone in the nfl and other pro sports would have white beards
one thing that does happen sometimes tho, their retinas will get harder over time, resulting in really good vision from far away. almost blind up close but they got crazy good eyesight from far away

Long read but really interesting and recommended. Part that pertains to this thread is about how the body wants to save as much strength as needed but doesn’t really like the caloric cost of keeping on muscle mass. So over time the muscles are adapted through various processes to be able to get activation(strength) out of a smaller muscle. This allows a specimen to avoid paying the high metabolic price that goes along with having bigger muscles while still being able to function as needed.

The most strength I've felt from a single person was a 60-something year old I worked with at the time. We were ribbing each other and he came up and put me in a bear hug. I thought damn he's strong for an old guy, then he actually cinched it in a bit. He wasn't even in a position to use all his strength or leverage and could have probably killed me if he wanted.
My hypothesis is the neurological adaptations that drive strength are one of the last physical qualities to fade, and can be improved all the way up until the point they diminish. Being old won't make you strong, but those 60 year olds who've had a lifetime of physical demand on their body are no joke.
