Easy lazy chicken recipes?
Gained quite a bit of weight from working at home any gyms being closed. Want to do keto but i want to lazy cook chicken.
What i do right now is i just boil a bunch of chicken with some salt and pepper and eat it with hot sauce. Extremely plain which is getting gross. Any recommendations?

just cut that chit up into bite size pieces, cook it a bit and then finish it in some simmer sauce
can add some vegetables too like zucchini, peas, etc

or you can buy a whole chicken, strip the cooked meat, set aside and use the leftover bones to make a chicken broth (add bay leaves, anise, rosemary, etc), then add egg noodles and chicken with peas and carrots, simmer on low for several hours to let the flavors develop and you've got chicken noodle soup for the week

Cut off any excess fat/skin. Spray both sides lightly with olive oil. Not canola or any of that chit. I use garlic salt/onion powder. Just try to lightly sprinkle it on but like you would a salad. add a little pepper and I like to put a little butter on top and a splash of hot sauce. Let it sit for like a minute all together then just take a full breast and shove it up your *ss OP. Enjoy.

1) Buy a good instant read thermometer. I got this Smartro st49 a couple months ago to replace my old thermometer.
2) Salt/season your chicken the night before.
3) Cook however, but pull it at 150-155 degrees (for chicken breasts; dark meat would be tough and stringy at that temp and should be cooked to like 170+ depending on what you're doing).

1 envelope of chicken gravy
1 envelope of Italian salad dressing
1 envelope of ranch dressing
1 quart of chicken broth
4-6 large skinless, boneless chicken breasts
Put chicken in slow cooker/crock pot
Whisk the dry ingredients together in a >quart size bowl
Add the broth to the dry ingredients and whisk until well blended
Pour over chicken (if liquid doesn't cover chicken, add water)
Set crock pot on high for 4.5 hours
Chicken will be the most tender and flavorful you've ever had.
Use the broth to cook rice.

Drain water, put in a bowl with a scoop of mayo (or whatever), toss in some shredded cheese, some bacon bits and mix. Very quick, tasty, and easy lunch or PWO meal - and over 40g of protons.

Decided to just make marinades, put the chicken and marinade in a ziplock bag and cook it over a stove top. This is for chicken thighs (bone-in) btw. Looking to purchase air fryer as well.

Personally I find handling/cleaning/prepping raw chicken both gross and dangerous, so trying to eat chicken daily (like I do) becomes a hassle if you try to cook from raw. You have to sanitize every time to avoid the transfer of salmonella and other bacteria.

I get that from Costco. Throw it on an aluminum pan and bake for 20-25 mins. To me, it tastes just like Chick Fil A nuggets. I actually also get frozen waffle fries and bake them too lol. Easy, quick, clean, healthy. Plenty of protein and delicious IMO.

I like using chicken tenders as I have a local place that packs and sells them in 1 - 1.5 lb packs at a good price but breast will work also ...
season chicken in a small baking dish that barely holds the chicken for several hours with black pepper, Lawry's seasoning salt, Mrs Dash table blend, onion powder, smoked paprika
dice onion finely and spread on top
shake parmesan cheese on top of that
bake at 350 for 45 minutes

boiling chicken removes most of the flavor and is only good if you're using the chicken broth in another part of the dish like making chicken and rice for example
my favorite chicken and rice recipe -
bring to boil and simmer 1-1.5 lb chicken tenders for one hour with same seasonings I listed above in my last post or whatever you like
take off heat
remove chicken from water to bowl and leave broth in pot
using the excess water method, cook rice in the chicken broth; Jasmine rice is best rise; you want water soup rice when done so don't use too much rice; you'll want about double the water to rice ratio as on the rice package
dice the chicken finely as you want - I like it almost powdered and use a sharp biscuit cutter for this( is good for chopping onions also)
return chicken to the finished rice and chicken broth
add 1 can black eye peas and 1 can green peas
cook for 20 more minutes; should have enough water to be soupy and served in a bowl
mm mmm good
....
but OP if you want extra simple but still slightly flavorful then throw it in a baking dish and cook at 350 for 35-40 minutes or so; it will be better than boiled

honestly the laziest method is to brine a whole bird (for brine use a heaped tablespoon salt for every 500ml water, make enough to fully cover bird)
let it sit an hour or two, crack some pepper on top or any other seasonings (no need for salt)
~230c for 45min will get the skin nice and crispy and the brine really helps season the whole thing and tenderizes the meat

Kosher salt, pepper, garlic powder both sides of breast. Bake at 425 for 15 minutes, flip and bake for 10 more minutes.
Make sure to use more salt than you think you'll need. The seasonings plus the grill like texture of the breast are dang tasty.
