MISC BBQ Thread. Are you in?
I didn't see a thread for the BBQ and believe there's a need so here it is. Please post your cooks and recipes for the gains.





Here's my wing recipe on the weber kettle using a vortex basket:
Here's a decent rub recipe but you can use abobo or whatever seasoning you like.
Brown Sugar
Kosher Salt
Smoked Paprika
Coarse Black Pepper
Cumin
Onion Powder
Garlic Powder
Cayenne Pepper
We use a 1:1 ratio of Sugar to Everything Else.
I use apple wood for smoke.
435 degrees min for 20 min, flip and another 20 min.
Here's my wing sauce:
3/4 stick of salted butter
1/3 cup ketchup
2 tablespoons honey
One cloves of garlic or more to taste
Add Franks Red Hot for spice

No Traeger's in my home btw.

Oklahoma Joe offset
Almost exclusively hickory for everything but mostly because I generally stick to beef and pork
I keep everything simple and therefore consistent
Briskets I try to stay around 12lbs each
Smoke until internals are 165, wrap until 205, rest minimum 1hr which also provides time to make burnt ends (this would be my death row last meal request fwiw)
For baby backs the 3-2-1 method works well for me although i like the meat to have just a tiny bit of fight to the bone so more like a 3-1.5-1
Butts are pretty hard to fukk up as long as you get em over 200 deg before pulling
They can be somewhat bland depending on the hog so I don't fukk around and go with a mustard binder, heavy on the rub, doubly heavy on the smoke

1 cup of favorite BBQ rub
