- let it sit for 5-10 mins

IE - don't put it in oven. Don't cook it for long time at lower temps. Don't use cheap meat or low quality cut.
also its a good idea to let it sit out a bit before cooking to get an even cook throughout.

maybe that's the ticket. I don't have one and try to make it look restaurant-worthy and end up taking out too early or putting it back for too long.

wish it wasn't so late. mouthwatering just thinking about really good steak. I gotta say I've had the best steaks at restaurants so I kinda think that had a secret or it was their super-hot ovens.

450 for 4 mins on each side is OK too. If you don't have an IR thermometer, then just set your burner on high, put pan on it (ideally cast iron) and put meat on it after 5-7 mins.
**Eat lots and lots of birds. The smaller the bird, the more compact its protein content. Parrots are great sources for protein.**

The funny thing about this picture, which I recently learned, the school districts and food bank consider potatoes /tater tots as a vegetable

I would have put the guacamole on the rice with soy sauce. Then on the potato more onions and mushrooms or ditch the guacamole and use A1 and butter on both
