Vietnamese caramel pork with rice and pickles and stuff

This is very good and very easy. There is no technique involved. You don't even brown the pork. You just braise it for 90 minutes until the braising liquid reduces to a caramel. What the recipe writer mentions is true about how it looks though - for the first 87 or so minutes, it just looks like boiled meat. Lol. Then when it caramelizes it looks bomb.

After cooking:



Added some home made pesto in it using walnuts NOT poverty pine nuts.



I may try adding lemon, spinach, beets, or something else when I try again. Super easy to make and you can freeze them for up to a month.

Make my own dough, this was a 5 day cold ferment about 61% hydration using King Arthur Bread Flour (12.7% protein)

Cooked on a Pizza Steel at 525 for 5 minutes.

Perfected my pasta technique.

Used semolina flour instead of all purpose flour.

Tons of kneading and rolling the dough through the Marcato. Also lots of dusting the dough.









Not even really into pasta like that but fuark it will be fun to infuse pasta with different flavors, etc.

Cooking overall is a relaxing hobby to me and once I know how to make certain things I like to do it myself.

Honestly though I just did it because it's fun. If you're single I bet it would get you major points with a girl and it would be a fun date!

If you make this in the Instant Pot the broth comes out so clear but with the concentrated chicken flavor. Did you use Nongs recipe or do you have your own?

I used Molly Baz's recipe from Cook This Book. I'm...a little obsessedI'll try the IP next time!

Cast iron white pizza. First time using cast iron to cook one and hadn't done one from scratch for years so thought I'd give it a go again. Too much dough for this style of pizza and learned that I'll never do the dough in the Ninja mixer again. Messy and had to adjust it in a bowl by hand like I would've done in the first place.

8" pan

Dough - 50/50 white/wheat flour with Italian herbs and garlic powder/granulated

Toppings - Olive oil base, minced garlic, mozz, ricotta (I blend parm, herbs and garlic powder/granulated in it, too), white onions (normally use red but didn't have any), green and red pepp and jalepenos.

Went ok for not doing one for years. Will give it a go again this weekend.

Mirin cast iron pizza. Lately when I make it, I enjoy gently frying the bottom for 5 mins in a bit of olive oil before putting it in the oven. It makes some interesting crust.

That's exactly what I did. First time doing it this way and the crust is actually pretty thick (just realized that it's hard to tell from the angle of the pic) so it started on the stove for about 6-7 minutes until the bottom was a nice golden brown then put it in the oven on broil for about 7 minutes.
