I mean you can’t go comparing mass produced foods to our southern chefs. Even northern chefs I mean I’m in cherry and Apple country and grew up with my moms pie recipe which is fantastic.

But america has some true masters.

Got to work with chef sherry yard for awhile. Her pies are absolutely amazing.

Optimism. America is one of the few countries where a comeback is possible, and something I root for. Blah blah cancel culture nah, to the average American and immigrant, this is the place where no matter who you are, you can be someone.

Maybe kindness as well? Two Best of America stories stick out to me - one, when I was frantically trying to get a flight out to see a family member before they died, a strange woman in Philadelphia asked if she could hug me and prayed for me. She sent flowers to the funeral. The second, my car died in the middle of west Texas with zero cell service and a car hadn't passed by for at least an hour. The first car to drive up was a couple on the way to their son's funeral. They drove me hours out of their way and dropped me off at my dorm and didn't accept anything (not that I had much anyways.) I'll never forget them.

Yeah I’ve worked in 2 Michelin star restaurant in Paris assembling a pastry to be sent to Pierre gagnieres head fukking pastry chef who walked in.
