Air fryer meatballs - Gordon inspired
Idk my new toaster oven has a air fry setting but I’m dubious about it replacing a sizzling pot of oil.
However it worked out perfectly for quickly setting the outside of my meatballs before simmering them in the sauce the rest of the way (only cooked outer 10-15% with fryer)
Lightly carmelized onions and garlic with aged balsamic in the marinara for a light yet deep flavor to match pork meatballs.
Cheesy bread and broccoli/basil/parm salad. Everything was 14$ minus some odds and ends I already had like balsamic, eggs, some seasonings, old rolls, etc.. have leftovers too.

There’s just somthing about being wrist deep in ground meat slicked with eggs that makes me rock hard.

I always wondered - as a professional chef, do you get home from work and just say 'fuk cooking', or do you go all out at home, just maybe using cheaper ingredients?
Whats it like?

I also don’t cook other than developing recipes anymore or if someone goes on vacation and someone else gets sick at the same time or something.
I used to absolutely destroy my kitchen on my time off but that was before kids and I was working a lot too, but cooking other peoples food so it didn’t satisfy the itch.
I cooked the least at home when I first started having kids and first year or two of restaurant being open. Then I would usually just take stuff home or have wife pick up food from restaurant. A lot of times just what I would cook for staff meal (we do one big meal a day)
Either way I almost always cook cuz I’m hungry and want to eat somthing specific.
I realized at like 12 that lunch and snack were my favorite part of the day and any job where I could just munch tasty chit instead of starving all day and throwing away a mushy PB&J.
