Ask a guy currently brewing a hefeweizen anything (homebrew brahs GTFIH)

I've been meaning to brew this one for a few weeks but kept getting sidetracked. I decided to put aside the time necessary to brew this bad boy on this beautiful, sunny spring day.

She's mashing away now so I took the opportunity to eat some chicken, potatoes, and roast veg for lunch. Gonna start the boil in 20 minutes or so. Should be a good one.

I've modelled my recipe around the Weihenstephaner Hefeweizen, which is my favorite German wheat beer. 60/40 wheat malt to pilsner malt ratio; simple, single hallertau hop addition; Bavarian wheat beer yeast.

Many years ago, I wanted to learn how to brew my own beer. I consulted the internet, joined forums (much like I did with this forum to learn weightlifting and nutrition), and bought a small, modest brew kit at my local homebrew shop. 8-ish years later, dozens of brews, multiple medals from national brewing competitions, and a ton of new knowledge later, here I am. I would definitely recommend it if you're into good beers. I've brewed everything from Vienna lagers to imperial chocolate coffee stouts and everything in between.

Brew day today was relaxed and surprisingly went flawlessly given I've been dormant for 7 months. I hit my OGexactly. My efficiency continues to climb, hitting 92% today.

The fermentation took off within 18 hours and has been vigorous ever since. It smells fantastic already through the airlock.

Figured I'd check in this morning and see if anyone else here either is a homebrewer or would like to know anything about the process of brewing beers.

Cool mane. How do you maintain consistent mash temps with that setup? Im guessing you are using brew in a bag method but i don't see a bag. Is there a valve on that pot? How are you going to lauter/sparge? Cool pist more pics

Absolutely. That's how I started - in an apartment kitchen srs. You can either begin the journey using malt extracts that come in powder or syrup form or just begin what's referred to as 'all grain' brewing by using a newer method called brew in a bag (BIAB). If you have a few gallons there should be no problem at all brewing in your kitchen and I'm sure there are many tutorial videos on Youtube. Brewing beer is quite straight forward but the execution and finesse are what can transform your beer from a 'homebrew' to a truly spectacular product that compares to high-quality crafted commercial beers.

I'm actually able to maintain the mash temp within 2-3 degrees F for a full 90 minutes. I wrap the kettle with some insulation materials. I used to use a sleeping bag (lol). It actually works really well. Yes, I use BIAB (bag not pictured). What I do is let the grains mash and then I remove the bag and squeeze the ever loving schit out of it to get as much liquid out of the grains as possible. It actually doesn't affect the final taste at all. I'm able to hit 90% efficiency regularly using my method.

Swing by this late summer and sample some of my yearly Vienna lager

What a wonderful beer to have in the late summer sunshine just as the leaves are beginning to turn. A nice crisp amber malty lager that goes down so smooth.

I brew with a crew of 5 guys almost weekly every Thursday. 12 gallon batches. Probably have like $5k in equipment. I should make a misc thread

Yes, you can brew what's called a gruit - a more ancient method of brewing beer before hops became a mainstream thing. You can use herbs and flowers to bitter and flavor your beer. While I haven't brewed a gruit, I've brewed medicinal meads before using the same herbs/flowers. You can use bog myrtle, yarrow, lavender, rose hips, mint, etc. Not my favorite thing, honestly. Although, I've always been really interested in trying to brew a gruit stout using roasted dandelion roots and tree bark and stuff, kind of like you'd make root beer. However, I wouldn't want gallons of that stuff.

I wouldn't worry too much about estrogen and hops, not enough to destroy your enjoyment of good beer. Hefeweizens and lagers generally barely have 1oz per 5 gallons of beer. With modern, ultra pungent IPAs, you can have 10x that amount in 5 gallons.

I had shared this batch with a good friend of mine and we were constantly texting each other mentioning how friggin' dangerous this beer was. Imagine late September, a cool 20C out, nice and warm in the sun but slightly chilly in the shade necessitating a thin hoodie. Sitting in the yard watching the breeze blow a few leaves off the trees, sun shining, have one after another of these bad boys. I specifically brewed this one to be drunk in 1L steins too. That was the idea with this hefe as well. My trip to Munich many years ago really changed my approach to beer.

There are recipes without hops -- but screw that. If you don't like hop bitterness look for beers designed to be malt forward. Try some Bock/Dunkel. Or try a seltzer, you pansy

The quintessential winter beer. There's nothing like having a really solid dunkel by the fire casting shadows over the walls while the snow falls serenely outside, contrasted starkly and beautifully against a solid black canvas of night sky, and the Christmas tree illuminating the living room in colorful, festive hues of light.

Brewing is a really nice and effective mindful activity to engage in. I also like the fact that there's a lot of dead time during brewing, such as waiting for the mash to finish or during a boil that doesn't require your constant attention. It's a nice activity to do with a friend, just sitting around in camping chairs and having a few drinks. I also like taking the opportunity to multi-task and get my training session in particularly during the mash as my gym is right next to my brewery in my garage.
