6 Creedmoor currently. 22 centerfires shooting heavy bullets (80 grains) are a lot of fun, too.

25-06 for deer and coyote and pronghorn.
Shoots flat, hits well, decent recoil. I just really like it.
Its not winning a medal for anything but its been working in my Dad's rifle since 1969.
308, 243, 7mm are fine too.
300 win mag for elk and moose. It's loud and kicks a bit.
6.5 is a modern beast but I like the old school 25-06.

I don't know much about ballistics or long range, but would like to and I remember coming across an interview with the GOAT Chris Kyle where he lists, If I remember correctly, the 308 and 7.62 as his preferred rounds.
