Rate Crawfish Pie (Southern)

Had a lagniappe Sunday(Cajun miscers, did I use that right? LOL)

Shrimp stock junk - I love making stock from scraps! Anyone else save their seafood scraps for stock? My freezer is full of so much weird stuff.



Crawfish and shrimp going into the holy trinity and roux







Oh dear lord, get me seconds! Gonna have to go hard this week to work this off!



Used Kwame Onwuachi's recipe - cannot recommend his cookbook and recipes enough. I thoroughly enjoyed him on Top Chef and he seems to be flourishing post TV

solid roux. I make a pretty good etouffee. I just buy stock though I typically don't do it from scratch unless making pho and want it to simmer all day long.

If I had any suggestions it would be that the roux needs to be thicker. Looks amazing though. Woodeat/10

I do a boil every year for friends. We did our last one about a month ago. I ordered 80 lbs of live crawfish. Cooked 30 pounds of potatoes, 75 quarter pieces of corn, and 10 pounds of andoullie. We had a bunch left over so over the course of two afternoons I peeled enough to yield four pounds of tail meat to freeze. I'll use them for gumbos and such.

Everyone loves it. Invited our new neighbors who recently moved from Connecticut over. They had never heard of a crawfish boil. I think this last one we had about 35 people. My son and his buddies told me next year they want me to take out two live ones and have a crawfish cage death match.
