Veggies suck but its because of how we cook them.
First cut a bunch of different types up and put them in plastic containers. this takes a few minutes but it will make it easier daily to eat them.
I do butternut squash or potatoes. Potatoes need to be in water or they will go bad so if you want those maybe just cut it before you eat it or put them in water,
Butternut squash cubed, Carrots sliced, brocolli, celery and onions. These all go great together.
To cook them you can air fry them but thats messy. i like a covered skillet.
Put some oil in the pan, not a lot, but it helps them brown vs just heat. Turn it on medium heat, I use #6 heat. Once the oil is hot throw all the veggies in and cover. Covering just makes them cook faster.
Dont put the celery or onions in now but wait until the other stuff ihas cooked for 5 minutes or so otherwise they will burn.
Add seasonings. This is where most veggies fall flat. They are like any other food and need lots of seasoning.
Lawrys is a must, garlic powder, pepper, paprika. These 4 seasonings are pretty much the go to for everything you cook. Be generous with them.
Put in the celery and onions, cook it all until done. You can tell this is done when the carrots and squash are done enough to cut with the stirring spoon spatula thing.
Takes about 10-15 minutes and you have a big plate of veggies you will swear are the best you ever had.

"To be a warrior is not a simple matter of wishing to be one. It is rather an endless struggle that will go on to the very last moment of our lives. Nobody is born a warrior, in exactly the same way that nobody is born an average man. We make ourselves into one or the other."-- Carlos Castaneda

Lentil soup.
If you want the recipe I can try to find it and post it but there are lots of recipes online. Basically it consists of lentils, cabbage, tomatoes with a little bit of onion in a beef broth.
You can make a big pot of it that will last days that only has like 2000 calories in the entire thing. Very tasty and fills you up. A big bowl of it might have like 200 calories and borders on feeling like a full meal.
