In order to be proficient at it, you have to start getting skills. It sounds fantastic from the outside looking in, but you have to think about everything that does and doesn't come with it.
There's a lot of comforts you will have to give up, and a lot more work you will have to do, but it is much more rewarding.
You don't even have to go out in the woods to live like that. Try live like right outside a suburban area with a place on some acreage.
You can watch a lot of different channels on YouTube about this stuff and get insights into it.

Step 1: Buy land in a Norwegian forest
Step 2: Live there
Step 2: Live there
"One day I won't be able to lift any more. Not I won't want to lift. I mean physically unable. That day could be decades from now or it could be tomorrow. All I know is that's the day I'll wish I could lift more than ever. The day I'd give anything for one more workout, one more set, or one more cardio session. So go hard and enjoy every workout, every set, every rep. Because one day you will wake up and you will never get it back."

I have wanted to do it, but you would have to be rich first to get it done.
Where is there free land where you can just build a house?
If you can buy the land, how will you pay taxes on it?
All of us need a variety of foods to stay healthy, we need dental care, we may need physical care, and protection from heat and cold.
Also, intelligent people need variety.
I don't think you can "hide away" without having a lot of money in the bank to help you live in primitive conditions.
Things might be different in some tropical country where there's food and a mild climate. However, I grew up in the woods in Northeast USA and there's NOTHING in the woods and it would be a rough existence in most parts of the US.
Alone:
Somone mentioned this TV show and I watched a season on Netflix.
What shocked me was how light the wood was. Where I grew up, and even in Philly, even small trees are very dense and heavy.
They also were nearly impossible to cut with an axe.
I think could build a good house but it was take me five years and gear shots twice a week.

Best way to do this is on a registered trapline in Canada. But that's many many years of learning away from the average person.
I have atrapline cabin on crown ( public) land. 200,000 acres sole trapping rights, fishing, hunting, etc. Lots of people live on their traplines here and further north. It's quite sustainable, but you'll be butchering your own deer, skinning and butchering beaver and stuff, plus be able to be good enough to catch stuff. Running a trapline on snowshoe and canoe is your best bet, and IF you get a line, and IF you can get a trapline, you can live indefinitely on crown land in an off grid cabin.

Sick? Walk out and go to the hospital. Jump in the boat. Call someone with a snowmobile. It's not Alaska, you will be within reasonable distance from a road.

Find a small rundown farm near a town and either renovate the farmhouse or build a new one.
You don't actually have tobein the middle of nowhere tofeellike you are in the middle of nowhere.
My house is set 1/4 mile back from the road and has trees on 3 sides, even though is it only 1 1/2 miles from a large village and less than an hour's commute in the city.

Screw nature; my body will do what I DAMN WELL tell it to do!

Alone is different for a reason. Have a cabin, and bring in 100 lbs of rice, some pasta and Pancake mix, along with traps, guns, fishing gear and a canoe and you can do just fine. Most years you can dry hundreds of pounds of mushrooms in a few days.
Preserving food when it's warm is the issue, but anything can be learned. Winter is actually easier to live simply and remotely. Summer sucks.

Every year people get lost and perish in the bush, especially further north. But there is no reason for it with a bit of preparation.
