Rate pecan maple bread/10

I've made pecan squares in the past but never tried a bread. Not bad for my first attempt but needs more pecans and could be a bit sweeter.

Might need to break into the giant bag of Costco pecans. I've been delaying because once the last bag was opened they disappeared quickly. We like to just snack on them by the handful.

FWIW I could swear that I have read something about mixing your nuts with a little flour before stirring them in to the batter so that you can get better distribution. Keeps them from sinking maybe?

And I can say that if you use raisins [maybe other dried fruit?] that soaking the raisins in the beaten eggs for a little while before mixing up your cookies or batter makes the raisins come out more soft. Fairly sure I've posted that here before, but 'tis the season.

That's interesting. The pecans seem to spread out nicely but I need to use more. I had a problem with blueberries sinking when I attempted a blueberry cake.

I'm gonna try this one again. I follow the recipe to a point, but it always come out better when you play around and fine tune it.

Nice - looks good!. Made a buckwheat peanut butter banana bread myself recently. Lots of fun to try out different things.
